Sensibility

Purchase

A varietal Grenache (and usually 100%), Sensibility explores the more feminine side of the grape. Fermented in concrete and aged in a combination of concrete and neutral barrel, this wine’s pure fruit, freshness and site-driven minerality cannot be denied. Sensitive indeed!

Biography: Upon entry, the 2020 Sensibility encircles the front palate with red raspberry, ripe navel orange, and strawberry rhubarb pie and gains complexity as the flavors fan out across the mid-upper palate: cinnamon, clove, sweet chaparral, wet clay, yogurt, and milk chocolate. This wine is no stranger to sensation as acid and tannin play off each other with every sip, leaving a lingering impression of graphite, orange peel, lavender, and black pepper. – Jordan Fiorentini, Winemaker

MY BIO BY WINEMAKER JORDAN FIORENTINI
With its gorgeous, purply-ruby hue and exuberant fruit, the 2019 Sensibility charms from the get-go, but after a few sips, its complexity builds, and seriousness sets in. Black raspberry and cherry dominate at first, then lead to crushed rocks, sage brush, fresh-cut roses, cream, bergamot, wet soil, naval orange, and white pepper. The weight and texture also start introverted, but steadily open to a full mouthfeel, with structure making its presence known mid-palate and persisting thru the finish. With its fresh, boisterous aromas, and slowly-unraveling complexity, this 100% Grenache from Paderewski Vineyard is sure to show glamorously in your cellar for at least a decade.

MY BIO BY WINEMAKER JORDAN FIORENTINI
The enticing aromas of this juicy, ultra-fresh and pure expression of Grenache are undeniable: crushed raspberries, and wild strawberries alongside fresh-cut summer herbs with a hint of citrus. Although lighter in weight, the palate immediately transports this wine into the realm of high complexity normally reserved for heavier wines. The delicious fruit is present, but there’s so much more to its story: crushed rock, ocean air, naval orange, powdered sugar texture, rosewater, and fresh cream all laced together with balanced yet refreshing acidity.

2016 Sensibility, aka purity. Purity of place, purity of variety, purity of vintage. Fermented in concrete and aged in concrete and neutral large barrels, this 100% Paderewski Vineyard Grenache resides in her birthday suit without makeup or fanfare to disguise her natural state. Extremely bright and fresh, this purple-garnet hued beauty opens up in the glass to reveal black raspberries, chalky rock minerality, juicy pluot, delicate rose, dewy garden herbs, and a hint of white pepper.

There is no denying the magnetic energy of the stand-alone Grenache.  2015 gave purity of fruit and focus to our beloved “Pinot of the Rhône.” This garnet-hued stunner presents crushed wild strawberries, ginger, jasmine tea, wet rocks, rose petals, orange oil, and fresh Herbes de Provence.

Our closest definition of Grenache purity – 100% Grenache aged in 100% concrete and 100% Paderewski Vineyard. Eighteen months in concrete has preserved this wine’s beautiful Grenache-driven red strawberry fruit along with notes of fresh herbs, orange and ginger root. At the same time, concrete aging has imparted a seriousness to the palate apparent in this wine’s pure, layered texture, unadulterated and in her proverbial birthday suit. This wine will be an exciting ride to watch develop in your cellars.

MY BIO BY WINEMAKER JORDAN FIORENTINI
Like a beautiful blonde you think you’ve got pegged as superficial from first contact, the 2013 Sensibility seems to be mostly laden with voluptuous berry fruits residing on the front palate. With time, however, this seemingly textbook American chic will continue to surprise you with her off-the-beaten-track intelligence, complex personality and down-to-earthiness. As you wait for the first sip to hit the back of your throat, you realize you’ve judged this “pretty” girl wrong, her beauty lies in how effortlessly she destroys all “simple Grenache” stereotypes and straddles both new and old world wine flavors and sensations in one lingering sip.

Drumroll… our 2012 Sensibility is 100% Grenache!  And Grenache purity is what you will get! This wine is the result of an experiment to age our Grenache in concrete for the first year of its life, which helped preserve its intense aromas and enhance its minerality and texture. The aromas and flavors are irresistible – tart berry, fresh whipped cream, blood orange and a touch of vanilla – which combined with Grenache’s pure chalky tannins, help fine tune your senses. – Jordan Fiorentini, Winemaker

Predominantly Grenache produced from the Spanish clone, Garnacha 52, the 2010 Sensibility was, believe it or not, the sleeper wine from its vintage. Fermented and aged in puncheon, we left this Grenache alone to chill a bit post harvest. After 15 months in barrel, the wine started to come out of its shell and show its true (and oh-so-bright) colors. In addition to the bright aromatic components, the texture of this little ditty is memory-making, reigning in the lushness, and making you thirst for another sip. – Jordan Fiorentini, Winemaker

Grenache took the leading role in the 2009 Sensibility due to our desire to craft a nuanced wine that dances a little lighter on its toes. Its nose delivers layers of character and subtlety which echo through its balanced and finessed palate – violets, lavender, citrus essence, raspberry, dried cranberry, crushed limestone. Pinot-lovers watch out! Have you ever seen west Paso be so feminine? – Jordan Fiorentini, Winemaker
